Food Service : A note from David Schleider
creator of True Lemon and True Lime and founder of Grand Brands

My family has been in foodservice for three generations so I grew up understanding the importance of food quality. Before creating True Lemon and True Lime, I trained as a professional chef and served as a Foodservice Director and Catering Manager for large service operations. You can say foodservice is in my blood.

Six years ago, I was sitting in a restaurant with my father when the idea for True Lemon came to me. Waiting for another bowl of lemon wedges to be brought to the table, I looked down at the sugar caddy and wondered why hadn’t anyone put the fresh taste of lemon into a convenient packet? The idea resonated with me not only as a consumer of lemon but also as a chef since I had often been frustrated with the inconsistency of fresh lemons and limes as well as the fact that they are labor-intensive and involve a lot of waste. Additionally, lemon in a dry form is more versatile, allowing flavor to be added to the dish without adding unnecessary liquid.

In developing True Lemon, my goal was to duplicate authentic, fresh-squeezed lemon taste but in a crystallized, shelf-stable manner that was convenient to use any time, anywhere. I spent three years perfecting True Lemon, making sure to capture the best of the lemon by locking in the oils of the pith and rind as well as the tangy juices. When I later developed True Lime, I was equally demanding, capturing the best of the very volatile lime.

Available now in packets for the front-of-house and shakers for the back-of-house, True Lemon and True Lime have been my passion for the last six years and I am really happy to share them with you.
