A Little Lime Lesson

Limes varieties have been cultivated for centuries, but today most of us come across three different types of limes: 1)Tahitian or Persian limes which are large, juicy and aromatic; 2. The smaller, tarter Mexican, or bartender's lime; and 3: The key lime, a cousin of #2 and the hero of the key lime pie from Florida.

Enhancing the flavor of foods from rice to seafood to barbecue sauces and marinades, limes are also full of Vitamin C. (In fact, limes became famous for helping to stop Scurvy, the plague of many 18th century English sailors. The Scurvy was cured with a ration of one lime a day ... prompting the slang name "Limey".)
