    Strawberry Mango Popsicles

    Nothing beats a refreshing frozen treat in the heat of summer. These are simple to make and even easier to enjoy!

    Ingredients:
    • 2-3 mangoes (approximately 8 ounces), peeled and cubed
    • 1 pint of strawberries, washed and cut in half
    • sugar to taste (about 1/4 cup)
    • 3 packets True Lime
    • 3 tablespoons water
    Directions:
    1.  Dice about ½ cup of strawberries and set aside.
    2. Place the mango cubes and remaining strawberries in a blender.
    3. Add sugar, True Lime packets and water.
    4. Blend into a smooth puree. Stir in the reserved diced strawberries.
    5. Pour the puree in to popsicle molds, paper cups or ice cube trays.
    6. Place the molds on a tray. If using cups, place popsicle sticks in them before freezing. Place the tray in the freezer for at least 3 hours or overnight. Enjoy! 

    Protein-Packed Raspberry Lemonade Popsicles

    This tasty, sweet treat is packed with protein – a win-win for the kiddos and parents, alike!

    Ingredients:
    • One 5.3-ounce container of Raspberry Muuna cottage cheese
    • 1 teaspoon True Lemon Raspberry Lemonade drink mix
    • ½ cup + 1 tablespoon water
    • ½ cup fresh raspberries
    • ½ cup of fresh blueberries
    • 1 teaspoon sugar
    Directions:
    1. Empty cottage cheese container, True Lemon Raspberry Lemonade drink mix, and 1/2 cup water into blender and blend until smooth.
    2. In a bowl, mash raspberries, 1 tablespoon water, and sugar with a fork until macerated.
    3. Pour 1 tablespoon raspberry mixture into 4-6 popsicle molds.
    4. Pour blended cottage cheese mixture into molds, leaving 1 inch unfilled at the top.
    5. Pour 1 tablespoon raspberry mixture into the unfilled portion of each popsicle mold.
    6. Add popsicle sticks and freeze for two hours.
    7. Run popsicle molds under warm water for a few seconds before removing.
    8. Remove from mold and enjoy immediately!

    Creamy Lemon-Lime & Summer Berry Parfait

    Zesty and creamy – this is the perfect light and mouth-watering dessert for summertime!

    Ingredients:
    • 6 ounces softened cream cheese
    •  ¾ cup sifted confectioners’ sugar
    • Pinch of salt
    • 1 cup heavy cream
    • 1 packet True Lemon
    • 1 packet True Lime
    • 4 cups fresh berries, rinsed and drained well (raspberries, strawberries, blueberries, blackberries)
    • A few sprigs of fresh mint, for garnish
    Directions:
    1. Combine the cream cheese, sugar, and salt in a medium bowl.
    2. Using a hand-held electric mixer, beat on low speed until the cream cheese and sugar are combined. Add the heavy cream and beat on low speed until the mixture is smooth. Increase the speed to medium-high and beat until the cream holds medium-firm peaks, about 30 to 60 seconds.
    3. Add the True Lemon and True Lime packets. Stir until blended.
    4. Line up 4 parfait (or wine) glasses. Beginning and ending with the berries, evenly layer all the berries and all but about 2/3 cup of the cream into the glasses.
    5. Top with a dollop of the remaining cream, and garnish with mint, if desired. Enjoy!

    Tangy Citrus Popcorn

    A crunchy favorite with a little spice and zing! Try this tasty twist on a classic snack.

    Ingredients:
    • 2 tablespoons coconut oil
    •  ½ cup popcorn kernels
    • 2 tablespoons nutritional yeast
    • 1 tablespoon salt
    • 1 teaspoon cayenne pepper
    • 2 teaspoons True Lemon
    • 1 teaspoon black pepper or True Lemon Pepper Spice Blend
    • 1 teaspoon garlic powder
    • 3 tablespoons melted butter
    Directions:
    1. Using a non-stick rondeau (10 inch or bigger) or pot on medium heat, melt the coconut oil.
    2. Once the coconut oil is melted, add in the popcorn kernels and with a rubber spatula spread the kernels in the oil. (Or just shake the pan.)
    3. Place the lid on the pan and continue to shake until the kernels pop. While the kernels pop, start agitating the pan every few minutes to prevent burning and sticking.
    4. When the popping is complete pour butter over the popcorn and shake again.
    5. Add in all of the seasonings and shake thoroughly.
    6. Transfer into your desired dish top with another sprinkle of true citrus lemon. Enjoy!

    True Lemon Watermelon Granita

    Icy and cool, and a great slushie for the warm afternoons. And great for rehydrating with summer watermelon!

    Ingredients:
    • 7 cups watermelon, cut into 1-inch chunks
    • 1/3 cup sugar, or other sweeteners
    • 2 packets True Lemon, dissolved in 1 tablespoon of water
    • 1 tablespoon fresh tarragon leaves, optional
    • Fresh mint leaves, as garnish
    Directions:
    1. In a blender, puree watermelon, sugar, True Lemon juice, and optional tarragon leaves.
    2. Pour into a 13x9-inch metal or glass pan.
    3. Freeze for 1 hour, then stir with a fork. Freeze until firm, then scrape with fork into shards.
    4. Serve with fresh mint leaves, and additional watermelon slices.

    Fresh Peach Salsa

    If you’re looking for a little spice, try this sweet and spicy, and so refreshing, summer snack.

    Ingredients:
    • 6 peaches, peeled and pitted
    • 2 large tomatoes, cut into wedges, seeds removed
    • 3 tablespoons sweet onion, cut into wedges
    • 1/2 jalapeno pepper
    • 1/2 cup fresh cilantro, minced
    • 2 teaspoons fresh garlic, minced
    • 2 cans (4 ounces) green chilies, chopped
    • 4 teaspoons apple cider vinegar
    • 3 packets True Lime
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • Tortilla chips, for serving
    Directions:
    1. In a food processor, combine peaches, tomatoes, onion, jalapeno, cilantro, and garlic. Pulse until coarsely chopped.
    2. Add the chilies, apple cider vinegar, True Lime, salt and pepper.
    3. Cover and pulse just until blended.
    4. Place in a serving bowl and chill until ready to serve.
    5. Serve with chips. Enjoy!

    Strawberry Lemonade Smoothie

    Mix the kids’ favorite flavor with the creamy texture they love. It’s like a summertime milkshake, but healthy and hydrating!

    Ingredients:
    • 1 cup plain yogurt
    • 1 cup vanilla almond milk
    • 1 packet True Lemon Original Lemonade
    • 4-8 frozen strawberries
    • 1 scoop collagen protein
    • Add ice if desired (for consistency)
    Directions:
    1. Put all ingredients in a blender.
    2. Blend until smooth.
    3. Serve and enjoy!

    Watermelon Wedges with Lime

    What’s a summer snack without watermelon? Try this easy fun way to refuel and rehydrate your kids.

    Ingredients:
    • ½ cup True Lime juice (8 packets True Lime dissolved in ½ cup water)
    • 3 tablespoons honey
    • 3 one-inch slices of watermelon, cut into wedges
    • Popsicle sticks
    Directions:
    1. Whisk together True Lime juice and honey in a bowl until the honey dissolves.
    2. Arrange the watermelon wedges on a large platter and pierce the end with a popsicle stick.
    3. Drizzle slices with True Lime-Honey dressing in equal amounts. Serve immediately.
    4. Enjoy!

    True Grapefruit Ice Cream

    Of course, we can’t pass up at citrusy-ice cream for a sweet summer treat. Give this recipe a try for a twist of tart, or sub in your favorite True Citrus flavor packets!

    Ingredients:
    • 1-1/4 cup whole milk
    • ¾ cup sugar
    • Dash of salt
    • 20-24 packets True Grapefruit
    • 1-3/4 cup whipping (not heavy) cream
    • 1 teaspoon Mexican vanilla
    • Red food coloring, if desired
    Directions:
    1. In a medium bowl whisk together 1 cup milk, sugar, dash of salt, and 24 packets True Grapefruit.
    2. Gently blend in whipping cream, remaining 1/4 cup milk, vanilla, and 1-2 drops red food coloring, if desired.
    3. Chill covered in fridge for at least 90 minutes or overnight. The longer the better.
    4. Pour mixture into an ice cream maker and run according to the machine's instructions (most likely around 15-minutes).
    5. Spoon ice cream into containers and chill in freezer to harden. Flat containers work best for freezing quickly and gives it a creamier texture.
